Outstanding Chef of the year José Andrés plans to replace his Latin American-themed restaurant Café Atlantico in Washington, D.C.'s Penn Quarter with the America Eats Tavern, featuring a menu of iconic U.S. dishes to coincide with the new exhibition, “What’s Cooking, Uncle Sam? The Government’s Effect on the American Diet” at the National Archives.
Showing at the National Archives, Washington D.C., June 10, 2011 until January 3, 2012, this exhibition includes fascinating historical and modern-day recipes. Chef José Andrés serves as Chief Culinary Advisor to the exhibition and wrote the introduction to the recipe book.
