Just in time for the weekend, here is an easy breakfast recipe for President Kennedy's favourite waffles, which appears in Eating with Uncle Sam: Recipes and Historical Bites from the National Archives. The book is filled with 150 historical and modern-day recipes, and is heavily illustrated with documents and photographs from the National Archives. It accompanies the National Archives exhibition "What's Cooking Uncle Sam" which runs until January 2012.
JFK’S Favorite Waffles
½ cup butter
1 cup and one tablespoon of sifted cake flour
1 tablespoon sugar
2 egg yolks
1 pinch salt
7/ 8 cup milk, or one cup buttermilk
2 stiff beaten egg whites
4 tablespoons baking powder
Cream butter and sugar, add egg yolks. Beat. Add flour and milk alternately. This may be done at any time. When ready to bake, fold in egg whites, and add baking powder. Mixture should be thick and fluffy. Bake and serve with hot maple syrup and melted butter.
