
Wednesday 20 July 2011 President Hoover's Favorite Marshmallow Sweet Potatoes
"Use potatoes extensively!" - an unusual way to prepare the "Staff of Life " taken from Potato Possibilities, ca. 1917-20, Records of the U.S. Food Administration, reproduced in Eating with Uncle Sam: Recipes and Historical Bites from the National Archives
6 sweet potatoes
2 tablespoons butter
2 cups chopped walnuts
Nutmeg
Salt
Cream
Marshmallows
Boil the sweet potatoes, mash with a potato masher to remove all the strings. Add butter. Add nutmeg and salt to taste (try small amounts the first time!) Add cream enough to make a soft consistency. Fold in walnuts. Put into baking dish and bake for 10 minutes. Cover the top with marshmallows and bake until lightly browned on top.
